At the Root 66 Food Truck, we feel it is important to serve delicious food that people can relate to. And most of the time, that has to undeniably be comfort food! Whether it be our Famous Brisket Nachos, Chipotle BBQ sandwiches, Tacos Chingones, Tamales or our Chicharron Burritos, we want everyone to be able to come to our truck and have something that all can enjoy. We love serving classic authentic Mexican and American food with our own twist. Just because we are a vegan establishment does not mean we have to sacrifice flavor! Not at all! The Flores family has been operating the Root 66 Food Truck since June 2019. They have used traditional and authentic recipes to bring out the flavor in their amazing unexpected vegan dishes. With family originating from Chihuahua, Mexico and Texas, they have integrated cultural dishes into classic comfort food favorites in plant based versions that even the most devout meat eater can enjoy. The whole concept of the Root 66 Food Truck is to change your perspective from the bland and boring stereotypes of plant based eating to the exciting and nostalgic flavors many of us grew up with, but in a vegan version. The facts are there and there is no denying that starting the switch to a vegan diet can dramatically decrease your carbon footprint, allow you to enjoy various health benefits and of course, align your ethics with what is on your plate. Vegan food is not a restriction, but an opening to a whole new world that many probably did not think could exist. I mean, who thought you could eat a BBQ sandwich or tamales as a vegan lol! So do not worry if you are not a vegan (just yet), you will enjoy Root 66 Food Truck regardless!!
